Chocolate Ginger Cookies

1 1/4 c. Brown Sugar
1 stick Butter
1 Egg
1 tsp. Vanilla
1 1/2 c. Flour
1/2 c. Cocoa Powder
3/4 tsp. Salt
3/4 tsp. Baking Soda
1/4 c. Molasses
2 tbs. Crystallized Ginger (minced)
Pinch (large) Cinnamon
Pinch (large) Cloves
Coarse sugar

Preheat oven to 350 degrees.

Beat the sugar and butter until fluffy. Combine egg, vanilla, molasses, ginger, cinnamon, and cloves and add the butter mix. Whisk flour, cocoa, salt and baking soda. Stir into the butter mix. Drop by tablespoons, sprinkle with coarse sugar and bake 8-12 minutes. Leave on the pan for a few minutes then transfer to wire rack for cooking.
